Quinoa Chicken parm

1/4 cup of dry Quinoa (cooked)
1/4 cup of organic pasta sauce or homemade with no added sugar or salt
1 stewed chicken breast, shredded
2 oz of Fresh Mozz
Garnish with fresh basil
Add crushed red pepper if you like that kind of thing!



Really, just throw it all together and throw it in the microwave for 1 minute.

It is seriously delicious, super easy (as most of my quinoa recipes are), and great for you.

  2. Hey! You can stew chicken breast by boiling it but I generally throw a few breasts into the crockpot with seasoned water or low sodium broth and let them cook trhougout the day.

    This makes it very shreddable and I like that texture better in some meals I make.

    I also cheat and buy all natural chunk canned chicken from time to time at Costco. Similar consistency to stewed chicken.
